EAT: LOLLY GOBBLE BLISS BOMBS


SERVES 6 | PREP 5 MINS | COOKING 35 MINS | VEGETARIAN, GLUTEN FREE

A bubble bath might seem decadent to you, but these are the perfect accompaniment when watching a movie with the lads. Think Saturday night on the couch under a rug with popcorn. This popcorn!

 INGREDIENTS
1 batch of freshly made salted popcorn*
1 cup butter/margarine (I use dairy free margarine)
1 cup of brown sugar
1/4 cup of rice malt syrup (or you can use honey, but it is so much sweeter!)
1 cup cashews (you can either chop up or leave whole like I did)
1/4 tsp baking soda
1 tsp vanilla extract
1 tsp salt

METHOD
1 Place ready-made popcorn in a bowl.
2 In a saucepan, melt butter and add brown sugar and rice malt syrup. Stir until mixed and then let it simmer gently (don't touch it) for about 5 minutes, until it start to turn a lovely dark golden color.
3 Remove the saucepan from the heat and add vanilla, salt and baking soda. Let it cool for a few minutes and then pour over the popcorn. Mix thoroughly.
4 Spread out onto a baking tray with a baking sheet and place in the oven for approximately 30 minutes at 140 degrees celcius (approximately 275 farenheit), turning the popcorn occasionally.
5 Let cool completely on waxed paper.

*Here's what I call one batch of popcorn: a single layer of popcorn kernels at the bottom of the pan. You want them to be very crowded but not more than one layer thick.

Perfect to eat whilst watching a movie.
