EAT: LENTIL, SNOWPEA + HALOUMI SALAD
SERVES 6-8 | PREP 10 MINS | COOKING 10 MINS | VEGETARIAN, GLUTEN FREE
When my friend Alicia told me about this salad, she described in such a luscious way, I knew I had to try it. And I'm so glad I did. I memorized the recipe (and double-checked with her), and tried it the following week. It's one of those salads where I literally cannot stop eating it. It's that good.
INGREDIENTS
1 tin of lentils, drained
1 pkt of haloumi, cut into cubes
250g snow peas, sliced longways
3 tomatoes, quartered
juice of 1 lemon
salt + pepper to taste
(I used a bit of lettuce and capsicum because my husband told me I wasn't using enough of these items from the garden!)
METHOD
1 Cut up vegetables and place in a bowl.
2 Place haloumi in a fry pan that has been sprayed with light olive oil until the haloumi is golden brown (or in my own case, until it's really, really well done!)
3 Add haloumi to salad and drizzle lemon over the top.
4 Season to taste and serve immediately.
So, I dare you... see if you can stop at one serve.

Oh my....I'm getting some halumi next time at the shops and whipping this baby up. Gee I wish they invested screen lick ability...it looks delicious!!! B xx
