EAT: RENATE'S VEGETARIAN SAUSAGE ROLLS
MAKES 40 | PREP 15 MINS | COOKING 25 MINS | VEGETARIAN
At a friend's daughter's birthday party, she served these sausage rolls. OMG - they were to die for! I made a bit of a piggy out of myself, because I couldn't stop eating them! Renate shared the recipe (she's that kind of friend!), and it's on our table a lot. The recipe makes enough to freeze (makes 40), but they don't last that long at our place.
Hubby doesn't even think they're bad. And dipped in sweet chilli sauce... delish!
INGREDIENTS
1 onion
1 cup pecan nuts
3 eggs
2 tbsp soy sauce
1/2 cup breadcrumbs
2 cups low fat cottage cheese
2 carrots
1 cup rolled oats
5 sheets puff pastry
sesame seeds for topping
METHOD
1 In food processor, finely chop onion and pecans. Add eggs, soy sauce, breadcrumbs, carrot and cottage cheese. Process.
2 Place mixture in a large bowl and add oats.
3 Cut each sheet of pastry in half. Brush all edges with milk. Put mixture in a sausage shape lengthways down each half sheet pastry. Roll up into long sausage shapes. Mark each sausage into four with flat side of a knife. Don't cut through as filling doesn't set until cooked. Brush tops with milk. Sprinkle with sesame seeds.
4 Cook in a moderate oven (180 degrees celcius) until brown and crispy. Serve with the sauce of your choice (oh, and a salad).
