EAT: OAT, PECAN + MANUKA HONEY SNACK BARS



MAKES 24 | PREP 10 MINS | COOKING 20 MINS | VEGETARIAN, GLUTEN FREE

I found this recipe the other day and thought it was just perfect to add to the lunchbox repertoire. Nice and healthy, sugar free, and even vegan. And easy. Especially easy.

Turns out I'm a sucker for a trail bar.

INGREDIENTS
1 cup oats
1 cup pecan halves (or you could try sesame seeds or sunflower seeds for a nut-free bar)
10 dates, chopped finely
1/2 cup pumpkin seeds
2 tsp cinnamon
1 tsp sea salt
1 tbs maple syrup
2 tbs manuka honey
1 tbs light olive oil
1 tbs melted butter (I use vegan margarine)

METHOD
1 Preheat oven to 160 degrees celcius. Blend ingredients together in a bowl until well mixed.
2 Spread in the bottom of a non-stick or foil lined small baking tray. Bars should be about 1-2 cm thick. Bake for 20 minutes.
3 Let cool, slice and serve in kids' lunchboxes. Or morning tea. Or breakfast. Whatever your desire.

  1. Sounds delish... I'm thinking that you could add more oats and skip the pecans to make it a good option for a 'nut-free' school (all those kids allergic to pecans, you know?!) x

  2. Yep definitely going to whip this one up....I'm with bron too...perhaps add some coconut or crushed weetbix and make it totally nut free!!! Glad to see you having a double serve with you tea too!!

    And secondly, I said I'm a trail bar nut. So, no. The trail bar you had before was a totally different awesome one.
