EAT: BIRCHER MUESLI WITH CHIA


SERVES 4-6 | PREP 10 MINS + OVERNIGHT STANDING TIME | VEGETARIAN, GLUTEN FREE

What is your favourite breakfast? Does it provide you with the energy you need all day? Is it complete with fruit and fibre and lots of super foods? Does it taste delicious?

Breakfast is my favourite meal of the day. And to me, this is the perfect breakfast. Full of wonderful things to wake you up: seeds, grains, fruit, nuts and a touch of cinnamon. Kickstart your metabolism and feel fantastic! Also, made the night before, it's so easy to wake up and just eat this on the run (you know - in the car, on the train...). Also it keeps for a few days, so you have no excuse to miss breakfast tomorrow.

Oh, and did I mention that it's low GI? Made with milk instead of juice really helps the dropping sugar levels.

INGREDIENTS
2 cups rolled oats
2 tbsp chia seeds
2 tbsp pumpkin seeds
2 tbsp sunflower seeds
2 tbsp sultanas (I used raisins)
1/2 cup frozen/fresh berries
1 tsp cinnamon
light soy milk/almond milk/cow's milk (I find that soy or almond milk has a better flavour)

The next morning add:
6 strawberries
1 apple
1 pear
small handful of chopped almonds & hazelnuts
a spoonful of fat free Greek yoghurt

METHOD
1 Combine oats, seeds, sultanas and berries. Cover with just enough milk that you can't see your oat mixture. Sprinkle with cinnamon. Cover and place in the fridge. Leave to soak overnight.
2 In the morning, mix with fresh berries, grated apple and grated pear (whatever you like or have in the fridge). Can also be served with chopped almonds or hazelnuts and yoghurt.

This is a huge serving and feeds 6 people.

This recipe was provided at a recent corporate breakfast at my work provided by Sanitarium Cultivate (It was so yummy!). Above is the amended version of my usual bircher muesli.

  3. Yum. I have never tried Bircher museli. Must give it a go. Will be on my own though as the hubby and kids aren't into oats. What's not to like?!

    1. My kids love it, perhaps it's an acquired taste? It's doesn't have to be as fancy as this one. Just oats and sultanas soaked in milk is just as good! Let me know what you (and your family) think. Am interested!!

  4. Sluuurp!! I'd soak with yoghurt too... my children totally refuse to eat breakfasts like this, but one day they will see the light!!
