EAT: BEST EVER [AND EASIEST] CHOC CHIP BISCUITS


MAKES 24 | PREP 10 MINS | COOKING 12 MINS | VEGETARIAN

These choc chip biscuits are the best ones I've ever tasted. They are crispy on the outside and gooey in the middle, with the right amount of chocolate chips. I have stopped using white flour, and prefer atta flour, a combinationn of wholewheat flour and wheat bran. It isn't too glumpy and doesn't compromise the flavour or texture. Also, snacks like these are more substantial and filling than those snacks containing white flour!

INGREDIENTS
125g soft butter or margarine (I use dairy-free margarine)
1/2 cup castor sugar
1/2 cup brown sugar
1 egg
1 tsp vanilla
1 1/2 cups Atta premium wholemeal flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1 dash salt
1 cup choc chips (I am usually very generous with the choc chips!)

METHOD
1 Cream butter and sugar. Add egg and vanilla and beat well.
2 With a wooden spoon, mix in sifted flour, baking powder, baking soda, salt and choc chips.
3 Roll mixture into teaspoons and place on baking trays covered with baking paper. Allow room for spreading.
4 Bake at 180 degrees celcius, for 10-12 minutes, or until golden in colour.
